A Chi-square test is used when the data is categorical (nominal) in nature. You essentially have a number count of members in separate groups and are trying buy wow weapons to determine if group membership is dependent on the independent variables. The null hypothesis of a Chi-square is that there are no differences among the groups and they are essentially equally distributed. In t-tests and z-tests (which I am assuming is what you are referring to as the use of a standard bell curve) the dependent measure is an interval or ratio variable. Variables like test scores, height, weight, and temperature all tend to be analyzed using these 'bell curve' tests.
